There are many pastas to choose from and making your own pasta is easy, Tortellini are ring shaped pasta , typically filled with meats and cheese. You can put what you like in these little fellas and they are going to taste fantastic. I fill my Tortellini with Sausage Meat, Homemade Sausage meat is best.

What is Tortellini?

Tortellini are pasta originally from the Italian region of Emilia. Traditionally they are stuffed with a mix of meat, Parmigiano Reggiano cheese, egg and nutmeg and served in capon broth. In the area of origin they are usually sold fresh or home-made.

Tortellins are sometimes called the Belly button pasta because of its resemblance and shape.

Today you can buy tortellini in ready made packets, ready to cook and serve up with a Marinara or other pasta sauce.

How to make Tortellini

3 -4 sheets of fresh pasta
Sausage meat for filling

For the Sauce
1 Tin of chopped tomatoes
1 diced red onion
1 teaspoon of lazy garlic
1 teaspoon of Tarragon

Cooking Instructions

  1. Roll your pasta through a pasta machine into sheets.
  2. Using a 2.5 inch cutter or glass , cut out about 12 to 16 tortellini rounds.
  3. Add half a teaspoon of filling to the centre of each round, then fold into a pasty shape.
  4. Fold back the tortellini and crimp the end together to form a ringed shape.
  5. With a pan of boiling water on the stove simmering , add the tortellini to the pan and cook for 5 minutes.
  6. Drain into a colander and serve straight away.
  7. For the Sauce
  8. Add all of the ingredients to a food processor and puree.
  9. Heat the sauce in a pan until hot.
