How to make Cauliflower Cheese

30g Butter
25g Flour
250ml Milk
1/4 tsp Nutmeg
Pinch Black pepper

Cooking Instructions

  1. Cut the cauliflower into small florets so that you have more than a dozen pieces then put the florets into a pan of salted water and boil for 7 minutes.
  2. While the cauliflower is boiling make the cheese sauce in a separate pan by first melting the butter.
  3. Mix the flour, pepper and nutmeg together in a small bowl.
  4. When the butter is melted add the Flower, Pepper & Nutmeg mix into the butter and whisk together to form a roux.
  5. Heat the milk in a microwave for a few minutes so that it is warm then whisk it into the roux to form a thick white sauce.
  6. Finally add the grated cheese into the pan and let it melt into the sauce.
  7. When the Cauliflower has been boiling for 7 minutes drain it out of the pan into a colander and let it dry for a few minutes.
  8. Put the cauliflower into an oven dish then pour the hot cheese sauce over the top so that it fully covers the cauliflower.
  9. Put the dish in a pre heated oven @200c or an Air-fryer at 180c and cook for 10 - 15 minutes or until the top of the dish is lightly browned.
