Cauliflower Cheese is made by baking Cauliflower Florets in a Cheese Sauce. The type of Cheese you use in this recipe is up to you. I have used a strong Cheddar for its distinctive flavour.
Some recipes add Stilton Cheese to the Cheese Sauce as this gives the dish a strong distinctive flavour.
This is sometimes made with broccoli and cauliflower.

Cauliflower Cheese first appeared around 1861 when the recipe was used as a side on a traditional Sunday Roast. Today Cauliflower Cheese is more a Vegetarian dish that can be eaten on its own as a light snack, but it is still popular on a Sunday Lunch.
Some variations of this Classic Dish include Cauliflower & Broccoli Cheese and a Breadcrumb topping on the sauce is also popular.
Replace 25% of the cheese with Stilton for a much stronger flavour
This recipe can be made with half Cauliflower and half Broccoli for a Cauliflower & Broccoli Cheese.
