This recipe for Chinese garlic and chili chicken is both quick and flavourful, making it an excellent choice for a weeknight dinner.

Begin by marinating chicken pieces in a mixture of soy sauce, minced garlic, and chili paste to infuse them with rich flavours.

Saute the marinated chicken in a hot pan until it is cooked through and slightly crispy. Add fresh vegetables such as bell peppers and green onions for added texture and colour, and stir-fry everything together until the vegetables are tender yet crisp.

Serve the dish hot over steamed rice or noodles for a satisfying meal that captures the essence of Chinese cuisine.

Oil
1 Chicken Breast
1/2 Green Pepper (Chopped)
1 Onion (Chopped)
Mushrooms
1.5 tsp Garlic Paste
1.5 tsp Chilli Paste (Sauce)
2 ladle (50 ml) of boiling water
1/4 tsp Salt
15g Soft Brown Sugar
2 tsp Corn Starch slurry
15 ml Dark Soy Sauce
15 ml Sesame Oil
5 ml Shaoxing Wine (Mirin)

Cooking Instructions

  1. I like to cook the Chicken Breast in foil for about 15 minutes, depending on the size of the breast. Or you can cut the raw chicken into small slices and cook in your wok.
  2. When the Chicken is cooked add your chopped Green Pepper and Chopped Onion to the Wok and cook for a few minutes. Add the Mushrooms if using and remember to toss and mix up the ingredients while they cook.
  3. Next Add your Garlic and Chilli paste to the Woke. Mix this into the other ingredients and continue cooking.
  4. Add a ladle of boiling water and mix it all together to form a sauce. Continue cooking for a few minutes mixing it up all of the time.
  5. Add the Salt and the Sugar to the Wok and continue cooking.
  6. Make up a cornflour slurry using 50/50 Cornflour and Water. You need to add just enough of this to thicken the sauce, probably a teaspoon or two will be enough.
  7. Finally add the Dark Soy Sauce and the Sesame Oil.
  8. Continue cooking for a minute then splash some Shaoxing Wine or (Mirin) into the Wok to finish off.
  9. You can decant this into a takeaway carton or serve it straight from the Wok.
