What is a Spaghetti and Zucchini Fritter

The word Zucchini is an American term for a Courgette here in the UK, which eventually becomes a Marrow when it reaches full maturity.

In this recipe we combine Italian pasta, cheese flour and of course Zucchini into a fritter, that is a snack food also great as a vegetarian option on a buffet.

3 Eggs *
80 g Parmesan Cheese
100 g Spaghetti
35 g Plain Flour
1 teaspoon Lazy Garlic
Oil for frying

Cooking Instructions

  1. Cook the spaghetti in boiling water as instructed on the packet . About 5 minutes until just cooked.
  2. Cool the spaghetti in a colander to room temperature.
  3. Mix the flour , Parmesan and eggs into a bowl with a fork.
  4. Add the Zucchini and lazy garlic. Mix together well.
  5. Get the spaghetti mixed into the batter.
  6. In a large frying pan , heat up the oil (Enough to fry the fritters)
  7. Drop a serving spoon size handful of the spaghetti and batter mix into the oil and form with a slotted spoon. Fry either side for about 2 minutes.
  8. Drain on some kitchen roll.
  9. Do this for each fritter.
