If there is one thing the Chinese know about then that is Rice and this Egg fried rice is the perfect dish to finish off any Chinese takeaway meal.

This rice is light and fluffy, then fried in a wok with Egg, Peas & Spring Onions.

The secret to getting this rice perfect is cooking the rice perfectly and then drying it out before hand. The rice should be just cooked so that it is still firm when you stir-fry it.

Egg Fried Rice is flavoured with a Light Soy Sauce or you can use a Dark Soy if you want more flavour.

Soy sauce is used to flavour most Chinese fried rice dished.

    How to make Egg Fried Rice

    Fried rice is a dish of cooked rice that has been stir-fried in a wok or a frying pan and is usually mixed with other ingredients such as eggs, vegetables, seafood, or meat. It is often eaten by itself or as an accompaniment to another dish.

    Fried Rice, including Egg fried rice is an Asian creation and was probably a way of using up left over vegetables to fry them in with rice to create a cheap budget meal.

    Today Fried Rice has become common place in takeaway restaurants and Western cuisine.

    For the Rice
    110 g Basmati rice

    Cooking the Rice
    Cooked Rice (As above)
    25 g Chopped Spring Onions
    1 Egg
    1 teaspoon light soy Sauce
    25 g Butter

    Cooking Instructions

    1. Put the rice into the boiling salted water.
    2. Bring to the boil
    3. Then simmer for about 10 minutes , until the rice is Al Dante .
    4. Put the rice pan in the sink , and run under cold water until the rice is cold.
    5. Drain in a colander until dry.
    6. Refrigerate for a few hours.
    7. Melt the butter in a Wok or a Frying Pan.
    8. Cook the Spring onion in the butter for a few minutes.
    9. Add the Egg , and mix in with a fork until semi cooked.
    10. Add the rice , and combine with the onion and egg.
    11. Mix in the soy sauce , and cook for a few minutes until hot.

    Cook the rice the day before, so that you can fully dry it out before frying it.

    Brown rice is a healthier alternative to white rice. I have used Basmati rice because it is a smaller grain rice and it cooks fast. Basmati Rice 💬
