When it comes to making a summer salad the choice is endless, but for me you just can't beat that contrast between a spicy pasta sauce and cool refreshing salad.

That is why this Spicy chicken pasta salad is the perfect combination and the great thing with this recipe is that we use crushed up crisps for extra taste and you can use any flavour crisps you fancy. I have used Smokey Bacon crisps but this recipe has worked great with Prawn Cocktail as well. ...

1/2 Diced Red Pepper (40g)
1/2 Diced Red Onion (40g)
25g Crushed Smokey Bacon Crisps
75g Mayonnaise
15g Tomato Paste
1/2 tsp Hot Chilli Powder
1/4 tsp Crushed Chilli Flakes
10ml Lemon Juice
Extra virgin olive oil

Cooking Instructions

  1. In this recipe I am using leftover cooked Chicken, but you can use a Chicken breast if you prefer.
  2. Mix the Mayonnaise and the Tomato Paste together in a bowl. This is the base to your sauce. If you want to make this truly homemade then why not make your own Mayonnaise.
  3. Next it is best to add the spice, so mix in the Chilli Powder and the Chilli flakes.
  4. Thin the sauce out a little by adding the Lemon Juice and mix this together well using a fork or a bell whisk.
  5. Dice up the Red Onion and the Red Pepper and add this to the sauce
  6. And now for the secret flavour to this pasta, I have taken a 25g packet of Smokey Bacon crisps and crushed them up into flakes. You can experiment with different flavours but I just love Smokey Bacon. Add this into the sauce and mix it together.
  7. That is the pasta sauce made now you can add your Chicken.
  8. Cook the macaroni as per the instructions on the packet, normally add the pasta to boiling water and cook for 6 minutes.
  9. When the pasta is cooked drain it into a colander and drizzle some Extra virgin olive oil on it. Toss the pasta in the colander so that it is coated in the oil. Extra virgin olive oil gives the pasta a nice flavour.
  10. You can then add the pasta to the sauce you made earlier and refrigerate this for an hour or so before serving.
