Welsh Rarebit is made like a thick, spreadable cheese sauce a bit like a Toast Topper, and is flavoured with Mustard and Beer.

Welsh Rarebit is often spread on toast then heated under a grill and it is a good breakfast idea served with a Poached Egg.

    How To Make Welsh Rarebit

    Welsh Rarebit is a traditional Welsh Cheese on toast recipe, flavoured with mustard and Welsh beer, Welsh Rarebit is the best Cheese on toast you will ever taste.

    Welsh Rarebit is sometimes mistakenly called Welsh Rabbit and is a traditional 18th century Welsh recipe called 'jocular' meaning Rabbit.

    Other names for this recipe include 'Toast Topper' and 'Cheesy Bread'.

    ingredients

    200 g Grated Cheddar Cheese
    1 pint Full Fat Milk
    50 - 100 ml Brown Ale / Beer
    1 tablespoon of Worcestershire Sauce
    2 teaspoons English Mustard
    3 teaspoons of Plain Flour
    50 g Salted Butter

    Cooking Instructions

    1. Warm the milk in a microwave or a separate pan, do not boil just get it hot.
    2. Melt the butter in to a medium size saucepan.
    3. When the butter is melted add the flour and mix into a paste.
    4. Slowly add the warm milk a quart at a time and mix together with a wire whisk, adding more milk until the mixture is at a thick consistency - A thick sauce. This should require about 3 quarters of the milk.
    5. Add the Beer, Worcestershire sauce & Mustard to the pan and mix together.
    6. When the sauce it bubbling and hot add your cheese and mix in. Allow the cheese to melt fully then remove the sauce from the heat and decant into a cooling dish.
    7. Leave to cool for a few hours until the Rarebit is set.
