About This Recipe

This is probably one of my favourite dishes, a spicy chicken breast steam cooked in the oven and marinated in a sweet chilli sauce.

I had a meal similar to this a long time ago and ever since I have loved the contrast of Spicy Sweet Chilli Chicken with the Cold Potato Salad it is a perfect blend between a spicy and Cool.

For the chilli sauce I have just used a bottle of Chilli Sauce, but you can make your own if you prefer. As I have said, this Sweet Chilli Chicken is perfect served with Potato Salad. ...

What is Sweet Chilli Chicken

There are many recipes for sweet chilli chicken out there, some make a type of chilli casserole , many make a version of sweet and sour chicken with chilli.

In our recipe we concentrate on the contrast between a slow roasted chicken breast in sweet chilli sauce with a cooling lemon and chive potato salad, and it is such an amazing combination.

The chicken is simply cooked in foil with Sweet chilli sauce then char grilled.

How to make Sweet Chilli Chicken

Cooking Instructions

  1. Take your chicken breast and butterfly it with a sharp knife.
  2. Roll out a good size sheet of tin foil (Aluminium Foil)
  3. Coat the centre of the foil with a generous amount of chilli sauce and place the butterflied chicken breast on top of the chilli sauce.
  4. Coat the top of the breast with more sauce and rub in with your hands.
  5. Wrap the chicken breast into a flat parcel with the tin foil so as to keep in all of the chicken juice as it cooks.
  6. Place on a baking tray and cook in a preheated oven at around 180 c for 20 mins.
  7. When the chicken is cooked you can flash grill it on a griddle pan for a few minutes, then serve on a thin layer of chilli sauce with fresh made chive and Potato salad.

This can be made with any cut of chicken you like. Chicken with the skin on is good.
