Italian Pasta Tortellini with sausage meat
Ingredients :
For the Tortellini : 
  • 3 -4 sheets of fresh pasta
  • Sausage meat for filling
For the Sauce : 
  • 1 Tin of chopped tomatoes
  • 1 diced red onion
  • 1 teaspoon of lazy garlic
  • 1 teaspoon of Tarragon 

     ' Tortellini are ring shaped pasta , typically filled with meats and cheese. You can put what you like in these little fellas and they are going to be fantastic. Tortellini comes from the Italian region of Castelfranco in the Northern province . This recipe is made with fresh egg pasta and sausage meat , but you can fill them with anything you fancy .. '

Method : 
  • Roll your pasta through a pasta machine into sheets.
  • Using a 2.5 inch cutter or glass , cut out about 12 to 16 tortellini rounds.
  • Add half a teaspoon of filling to the centre of each round, then fold into a pasty shape.
  • Fold back the tortellini and crimp the end together to form a ringed shape.
  • With a pan of boiling water on the stove simmering , add the tortellini to the pan and cook for 5 minutes.
  • Drain into a colander and serve straight away . 
For the Sauce : 
  • Add all of the ingredients to a food processor and puree.
  • Heat the sauce in a pan until hot.
