Meatloaf is like an American institution, a popular recipe that has many different variations. In fact you can season a meatloaf any way you like.

The one thing that seems to be constant with any meatloaf recipe is that it is always topped with a sticky tomato sauce.

Meatloaf is a great way to combine rich herbs and flavours with minced beef to make a cheap roast. The Meatloaf is formed in a tin, hence the name 'loaf' and topped with a tomato sauce.

    ingredients

    500 g Minced Beef
    1 red Onion
    50 g Fresh Breadcrumbs
    1 Beef stock cube
    1 Egg
    5 - 10 g Fresh Thyme
    3 teaspoons Hot Horseradish
    25 g Soft brown Sugar
    50 ml Ketchup
    50 ml Brown Sauce
    10 ml Light Soy Sauce
    10 ml Worcestershire Sauce

    Cooking Instructions

    1. For the Sauce
    2. Mix the Ketchup , Brown Sauce & Sugar in a pan.
    3. Bring to a simmer then add the Soy Sauce & Worcestershire Sauce.
    4. Simmer for 5 minutes then set aside.
    5. For the Loaf
    6. Put the Thyme , Beef Stock cube , Red Onion into a large mixing bowl and mix together.
    7. Add The Minced Beef and combine well with your hands.
    8. Add the Breadcrumbs and combine again.
    9. Add the Horseradish & Beaten egg and mix together well for about 5 - 10 minutes.
    10. Transfer the loaf mix to a loaf tin , pressing into shape.
    11. Top with the Sauce we made earlier.
    12. Bake in a preheated oven @ 180 c for 1hr or until the loaf is cooked.
    13. or Air Fry this meatloaf @200c for 28 minutes

    Chefs Tips

    I have used minced beef in this recipe, but you could try it with minced lamb & add Mint-sauce instead of Horseradish .
