 Classic Italian Lasagne

     ' Probably the Iconic Italian dish , Lasagne... There are many different methods to making this dish. But one thing is for sure , if your going to make this then you have to make your own pasta. With a rich tomato bolognese and a thick creamy bechamel sauce , this dish served with garlic bread is a must... '

Ingredients

  • 3 sheets of fresh egg pasta

For the Bolognese : 

  • 350 g fresh minced beef
  • Olive Oil
  • 1 teaspoon of plain flour
  • 1 onion
  • 1 teaspoon of lazy garlic
  • 1 tin of chopped tomatoes
  • 2 tablespoons of passata
  • 1 tablespoon of smoked paprika
  • 1 beef stock cube
  • 1 tablespoon of ketchup

For the Sauce : 

  • 300 - 400 ml milk (Warm)
  • 50 g of butter
  • 4 teaspoons of plain flour
  • 150 g Grated Cheese

Method

For the Bolognese : 

  • Dice up your onion and add the lazy garlic to it, mix together . 
  • Grind up the stock cube , add the smoked paprika & ketchup , then with a little hot water make into a paste.
  • Fry off the onions & Garlic in a pan with a splash of olive oil until soft.
  • When the onions are soft , add a teaspoon of flour and mix in.
  • Add the chopped tomatoes and continue cooking.
  • Then add the passata and the flavour mix you made up earlier.
  • Add the mince meat , and chop it into the sauce and mix well.
  • leave this to cook for around 15 minutes, until the mince is cooked.
  • Cover and set aside.

For the Sauce : 

  • Melt the butter in a saucepan. 
  • add 4 teaspoons of flour to the melted butter, and mix.
  • Then add up to 400 ml of warm milk , depending on how thick you want your sauce, keep cooking and whisk continually.
  • Mix in the cheese until melted.
  • Cover and set the sauce aside.

Putting the Lasagne together : 

  • In a greased oven dish , place the first sheet of pasta to fit. 
  • Add a good quantity of bolognese , then add the second pasta sheet on top . cut to fit.
  • Add another layer of bolognese , and finally cover with the last pasta sheet, being careful not to leave any corners sticking up.
  • Cover with a generous amount (if not all) of the cheese sauce.
  • Back in a preheated oven @ 180 c for approx. 35 minutes.

 ' Serve this with some home made , cheesy garlic bread..... '
