- 200 ml Water
- 2 tsp Sugar
- 85 g Butter
- 115 g Plain Flour
- 2 Eggs
- Pinch of Salt
- Get the water , butter & sugar into a saucepan and heat until the butter is melted.
- Get the heat up then add the flour and a pinch of salt to the pan.
- Remove the pan from the heat then beat the mixture with a wooden spoon until it forms a smooth paste. Empty the mix into a large mixing bowl and allow to cool.
- Gradually mix in the eggs until the mixture is smooth and shinny , it should drop off the wooden spoon when ready.

We all look for something different in a desert. my idea of a perfect pudding has to be a cheese cake with a fruit sorbet.
In this section I will try to tackle some of the classics as well as a few less well known dishes. Lets face it , a desert is a personal choice. We will start this section with the classic profiteroles & chocolate sauce.
