Velveting Chicken

Velveting or Tenderising chicken is a technique used in Chinese cooking.

Make a thick cornflour sludge and pour it over sliced chicken, then leave for a few hours.

Another method is to coat the chicken pieces with Bicarb and leave to tenderise.

Use about 1/2 tsp per sliced Chicken breast

Wash the Bicarb off with water before cooking.

Boiling an egg

Sounds simple right ? Wrong. Many people will get this wrong when they want a soft egg or a hard egg.

Soft egg : Bring the water to a boil with the egg in it, then simmer the water for 3 minutes for a perfectly soft egg. Take the egg out after 3 minutes.

Hard egg : Bring the water to the boil with the egg in it, then simmer the water for 6 to 12 minutes.

Remove the egg with a slotted spoon and spin it on its side, if it is hard boiled it will stand on its end.

Omelette

When cooking an omelette it is a good idea to get the grill on.

Once the underside of the omelette is cooked, insted of trying to turn it to cook the other side you should put it under the grill.

Doing it this way makes the job much easier.
