A Mexican Lasagne is a strange mix of two cuisines, Mexican & Italian.
The basic idea behind the Mexican Lasagne is the same as the Italian Lasagne, layers of Ragu but separated with Tortilla wraps instead of pasta.
In this recipe we use Tortilla Wraps in place of Pasta Sheets and the Beef is cooked in an Iconic Mexican sauce called Mole. Mole is the national dish of Mexico so it is worth getting this right for an authentic Mexican taste.
You could use a Tex-Mex Chilli for this recipe if you want to add an extra twist the the dish.

How To Make Mexican Lasagne
Mexican Lasagne is also known as Taco Lasagna or Mexican Casserole. It is very much like a traditional lasagne but it is layered with Tortilla Wraps and not Pasta sheets.
The Bolognese in this recipe is made with minced beef but you can use minced turkey instead.
For an added authentic taste the recipe uses 'Mole' which is the national dish of Mexico.

ingredients
400 g Minced Beef
100 g of Tortilla Chips
150 g Sweet corn Kernels (1 small tin)
400 g of cold Mole
1/2 Tin Chopped Tomatoes
60 g Grated Cheese
8 6" Tortilla Wraps
Cooking Instructions
For the Bolognese

Put the Tortilla Chips in a food processor.

Fry the mince beef in a large pan with a little oil.

Add the Processed Tortilla chips.

Add the Sweetcorn Kernels.

Add1/2 tin (200 g) Chopped Tomatoes.

Mix in 400 g of cold Mole
Putting the Lasagne together

Line the bottom of an oven dish with 2 to 3 Tortilla wraps

Add a layer of the Minced Beef mixture.

Add another layer of Tortilla wraps.

Add another layer of Minced Beef mix

Add the final layer of Tortilla wraps.

Add 100 - 200 ml of Mole to the top layer, then cover with the grated cheese

Bake in a preheated oven for 20 minutes or until the cheese is cooked and crispy brown.
